CHEESY SPICY BREAKFAST HASH RECIPE

To quote one of the greatest shows to ever grace our television screens “Why would anybody ever eat anything besides breakfast food?”


About a month into quarantine, I found myself using a lot of my extra time at home to try my hand at creating new recipes. For the most part, my recipes fall into two categories: some recipes I test multiple times, tweaking them a bit each time until they’re perfect. Others are just thrown together in the moment. This recipe falls into the latter category. I woke up one day craving some salty breakfast food, opened the fridge, and started throwing ingredients together. All of the ingredients in this recipe are items I usually have on hand at any given time.


As the title would indicate, this recipe is perfectly cheesy with just enough kick to it. It’s versatile enough to cook for weekend brunch or to throw together as a quick weeknight dinner, and you can easily switch up the ingredients with whatever is in your fridge. Ingredients

  • 2 russet potatoes, diced

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 2 TBSP butter

  • 1 TBSP pickled jalapenos

  • 1/2 tsp red pepper flakes

  • 1 tsp smoked paprika

  • 2 eggs

  • 1/2 cup shredded cheddar cheese

  • 1 avocado, diced

  • Salt and pepper to taste

Directions

  • Add the potatoes to a large deep pan and pour in enough water to just cover the bottom of the pan. Cover and steam over medium-high heat until water has evaporated, about 5-7 minutes.
  • Remove potatoes from the pan and set aside. Melt butter in the pan over medium-high heat. Add the onions, garlic, and jalapenos and sauté, stirring frequently, until onions are transparent and slightly browned, about 5 minutes.
  • Add the potatoes to the mixture and stir.
  • Add the red pepper flakes, smoked paprika, and salt and pepper to taste and give it a good stir.
  • Cook, stirring frequently, until potatoes start to get a nice crispy golden brown, about 10-15 minutes. Taste one to make sure they’re cooked to your liking. If you’d prefer them a bit softer, continue to cook until they’ve reached your desired consistency.
  • Remove potato mixture from heat and divide between two bowls. Top with a scrambled or over easy egg, shredded cheese, and diced avocado. Enjoy!
