RECIPE ROUNDUP: TRIED AND TRUE THANKSGIVING RECIPES

Over the past few years, I've noticed more people realizing the truth about Thanksgiving - it's all about the sides!!! I used to get a lot of questions about how I handle Thanksgiving as someone who doesn't eat meat, but the truth is, it's pretty easy. All the best sides don't have meat in them anyway! I'm seriously obsessed with Thanksgiving food, and once November hits I find myself constantly dreaming about that meal and the delicious week of leftovers that follows. My perfect Thanksgiving meal includes several types of potatoes, warm dinner rolls, cranberry sauce (the canned kind, obviously),...

LOADED SWEET POTATO BOWLS RECIPE

Disclaimer: this post is a love letter to sweet potatoes. Although pickles will always reign supreme as my favorite food, sweet potatoes are definitely up there for me. They're so versatile and they're delicious no matter what form they take. Sweet potato fries, roasted sweet potatoes, mashed sweet potatoes - I love them all! As an added bonus, they're full of nutrients. I try to incorporate sweet potatoes into one meal per week in our household. That usually means serving them as a side, but every so often they'll be the star of the meal. That's the case for this...

SALMON WITH ROASTED RED PEPPER SAUCE RECIPE

I first made this salmon recipe last month, and it took a couple of tries to get right. Darian and I both love green peppers, but we're not really fans of plain red peppers. Roast them, though, and it's a different story! In an effort to incorporate some new vegetables into our meals, I decided to try out a simple roasted red pepper sauce to pair with salmon and I'm thrilled with how it turned out. This recipe pairs fresh, flaky salmon with a zesty roasted red pepper sauce for a meal that's hearty but refreshing. I love to serve...

VEGGIE BURGER BOWLS WITH SPECIAL BURGER SAUCE RECIPE

Growing up, I was never really a big fan of burgers. My parents didn't let us eat fast food often, so they weren't something I thought about that much. Strangely enough, I didn't really develop a love of burgers until I stopped eating meat. As much as I wasn't a fan of regular burgers, I love a good veggie burger. We're lucky to have three phenomenal burger places in Frederick, and each of them boasts a DELICIOUS veggie burger - so since moving here, my love of veggie burgers has grown exponentially. I think what I've realized is that it's...

BUCATINI WITH FRESH SUMMER VEGGIES RECIPE

Today I'm sharing the recipe that reignited my love of pasta. In this recipe, fresh zucchini and basil, juicy cherry tomatoes, and crunchy corn come together in a zesty lemon sauce for a pasta that's simple but flavorful. I prefer it with bucatini (my favorite), but it would be great with any type of pasta! Everything comes together in 30 minutes flat and it's the perfect meal for a summer night on the patio. Try it out and let me know what you think!

VEGETARIAN TACO SALAD WITH CHIPOTLE RANCH DRESSING RECIPE

On a beautiful summer day, there's nothing I crave more than a fresh salad with a yummy dressing. Not all salads are created equal though, and sometimes I need something a little heartier than my typical salad. On those days, I turn to my trusty vegetarian taco salad recipe. Crunchy butter lettuce is topped with juicy tomatoes, fresh corn, and creamy avocado, and the addition of flavorful meatless crumbles seasoned with taco seasoning makes it heartier than your average salad. A zesty chipotle ranch dressing comes together in minutes and pulls it all together!

QUICK PANTRY PICKLES RECIPE

The thought of making my own pickles never really dawned on me until a couple of years ago, but once I started, I couldn’t stop. I’m of the opinion that every vegetable tastes better pickled. I came up with this recipe over a year ago and it’s been a staple in our house ever since. The beauty of this recipe is its simplicity - you should already have all these ingredients in your pantry. Try it out and let me know what you think!

SCALLOPS WITH WARM TOMATO CORN SALAD AND HOMEMADE SALSA VERDE RECIPE

There's something about summertime that makes me want to add as many veggies as humanly possible to every meal. That was pretty much the basis of this recipe. I've always loved the combination of scallops and corn, and I decided to take it a step further for this recipe and load up on the veggies by adding some fresh cherry tomatoes and crunchy green pepper. I think scallops pair really well with citrus, so I also added a zesty homemade salsa verde on top that really brings out the flavor of the scallops. This recipe involves a lot of chopping,...

BLUE CHEESE SALAD WITH AIR FRIED CHICKPEAS AND SIMPLE VINAIGRETTE RECIPE

I’ve been working from home full time for about a year and a half now, and honestly my favorite thing about it so far has been having the flexibility to put a little more effort into lunch every day. And if there’s one thing that Sweetgreen taught me, it’s that salads are only boring if you make them boring. I’ve been trying to use my cookbooks more often this year, and I’ve been really inspired by the flavorful salads with ingredients I wouldn’t have thought to include. This salad was inspired by a recipe in one of my favorite cookbooks,...

CINNAMON FRENCH TOAST RECIPE

There are two types of people in this world: breakfast people and dinner people (I've literally never met anyone who would consider themselves a lunch person). I fall into the first camp. I could honestly eat breakfast for every meal and I don't think I'd ever get sick of it. When I'm feeling stressed, frazzled, or sad, breakfast food is the perfect easy pick-me-up. Most of my breakfast recipes are quick and simple, making them a great way to end a busy day at work when I'm too drained to spend more than a few minutes cooking.
